I'm doing a test for a "Wonderboy" Music video for school, and i've done the tests, but they only let me save as either .avi or .mov Can't i just save them as .jpg or something like that?

You can't save as images at the moment so you'll have to do it the long way around. Export 1 or two frames as Quicktime, open up the file you've just made, take a screenshot of your desktop, crop the picture so you only see the video part, resave as jpeg.

Or import the 1-2 frame file into your NLE and then export as a jpeg or gif etc. Do not screen a temporary render because it isn't full quality.

Ok when i am exporting the clips,, the video guidelines seem to screw up the export, because when i am focusing at 25% , I don't even know wehat size they are. But when i export the image, it's focused on his head. HELP?

Make sure you scale your image before you add effects to it.
