Can I create opening credits with CompositeLab? If so, how?

You can create your text in another program, save it as a .png file, open it in CompositeLab, and just use it as footage.

I'm also pretty sure that there are other ways to save it besides .png, but that's what I use. The key is you have to have the background behind the text transparent.

Also, what NLE (non-linear-editor, i.e. Windows Movie Maker, Sony Vegas, etc.) do you use? Because lots of editors have pretty good title makers right on them.
