how do you do the black & white effect except something is colored,
like everything is black and white except my shirt.

Add a grade object, Desaturate everything to make it black and white.

If you are really lucky, you'll be able to use a key filter to autoselect the color of the object. If so, then you can just add another layer of the footage above the grade object, and remove everything but the colored object using the key.

If that doesn't work, then you get to rotoscope a mask around the object for many many frames to isolate it, so the grade object doesn't affect it. Add a mask to the grade object to isolate the shirt, or whatever object you want to retain its color, and animate the mask to match the shape of the object on each frame. Depending on the specific object and how it is moving, you may be able to skip frames between the keyframes and still get the mask to track decently.

This is a tutorial I made a while ago to teach just this very effect.

The FXHome programs have evolved since then, but the concept is basically the same.
